(we%20have%20yards!!),%20we've%20unintentionally%20become%20amateur%20bird%20watchers.%3C/p%3E%3Cp%3EWe%20got%20a%20bird%20feeder,%20and%20I'm%20proud%20to%20announce%20that%20we%20wasted%20no%20time%20in%20successfully%20fattening%20up%20everything%20from%20chickadees%20to%20thrashers%20to%20robins%20to%20cardinals.%20At%20the%20pace%20they%20were%20eating%20in%20February,%20we%20would've%20had%20to%20buy%2010%20pounds%20of%20seed%20a%20week%20to%20keep%20up%20with%20demand!%20So%20greedy,%20those%20birds.%20But%20so,%20so%20pretty.%3C/p%3E%3Cp%3EHere's%20where%20I%20segue%20into%20the%20recipe%20I'm%20featuring.%20(You're%20on%20to%20me%20if%20you%20realize%20I%20just%20wanted%20to%20show%20you%20some%20critter%20pictures...)%20I%20killed*%20two%20birds%20with%20one%20stone%20with%20this%20dessert%20by%20a)making%20use%20of%20coconut%20oil,%20which%20I'm%20really%20trying%20to%20incorporate%20into%20more%20recipes,%20and%20b)satisfying%20my%20random,%20inexplicable,%20powerful%20craving%20for%20pound%20cake.%3C/p%3E%3Cp%3EI'm%20not%20exaggerating%20or%20boasting%20when%20I%20tell%20you%20that%20certain%20bites%20of%20this%20cake%20were%20some%20of%20the%20finest%20that%20ever%20passed%20between%20my%20lips.%20That's%20an%20odd%20sentence,%20so%20let%20me%20explain.%20I%20don't%20know%20if%20it%20was%20my%20oven%20(which%20is%20notoriously%20spastic)(through%20no%20fault%20of%20my%20own,%20of%20course)%20or%20the%20altering%20of%20the%20recipe,%20but%20the%20exterior%20of%20this%20cake%20was%20brown-bordering-on-burnt.%20Not%20good.%20The%20inside,%20though,%20and%20the%20top%20(which%20is%20my%20absolute%20favorite%20part!)%20were%20fine,%20nay,%20fabulous.%20Soft%20and%20fluffy%20and%20pillowy%20are%20three%20adjectives%20which%20might%20describe%20the%20middle%20of%20the%20cake,%20as%20well%20as%20ideally%20dense%20and%20flavorful.%20There%20was%20only%20the%20slightest%20hint%20of%20coconut,%20which,%20as%20a%20coconut%20lover,%20I%20enjoyed.%3C/p%3E%3Cp%3EI'm%20delighted%20with%20the%20addition%20of%20coconut%20oil%20to%20this%20classic%20recipe,%20though%20my%20ancestors%20may%20cringe%20at%20the%20thought%20of%20using%20anything%20except%20(personally-churned)%20butter%20(using%20milk%20from%20the%20cow%20in%20the%20barn)%20in%20a%20pound%20cake.%20Times%20have%20changed,%20and%20(mostly)%20for%20the%20better!%20(I%20wouldn't%20mind%20a%20pet%20dairy%20cow,%20but%20I%20guess%20fat%20wild%20birds,%20squirrels,%20chipmunks,%20and%20bunnies%20will%20suffice%20for%20now.)%3C/p%3E%3Cp%3EWhere%20do%20you%20like%20to%20use%20coconut%20oil?%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20Grease%20and%20flour%20two%209x5-inch%20loaf%20pans%20or%20one%20tube%20pan.%3C/p%3E%3Cp%3EWith%20a%20mixer,%20cream%20butter%20and%20coconut%20oil%20together%20for%20a%20minute%20or%20two,%20until%20fluffy.%3C/p%3E%3Cp%3EGradually%20add%20the%20sugar,%20and%20beat%20for%20a%20while,%205%20minutes%20or%20so.%20You%20want%20an%20extremely%20light%20and%20creamy%20blend.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%201%20at%20a%20time,%20beating%20after%20each%20addition.%3C/p%3E%3Cp%3EStir%20dry%20ingredients%20together%20in%20a%20bowl%20and%20add%20to%20mixer%20alternately%20with%20milk,%20starting%20with%20the%20flour%20and%20ending%20with%20the%20flour.%3C/p%3E%3Cp%3EMix%20in%20vanilla.%3C/p%3E%3Cp%3EPour%20into%20prepared%20pan(s)%20and%20bake%20for%2050-60%20minutes%20for%20loaves%20or%2070-90%20minutes%20for%20a%20tube%20pan,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20of%20the%20cake%20comes%20out%20clean.%3C/p%3E%3Cp%3E*Disclaimer:%20No%20birds%20were%20harmed%20in%20the%20making%20of%20this%20post...but%20plenty%20were%20overfed.%3C/p%3E%3Cp%3E%E2%99%A5Credit%20for%20the%20critter%20photos%20goes%20to%20my%20boo.%3C/p%3E){kind=link}
