Chocolate Chip Macadamia Nut Muffins

Ingredientes

  • 1/4 c. Flour
  • 1/4 c. Brown sugar, firmly packed
  • 2 Tbsp. Margarine or possibly butter
  • 2 c. Flour
  • 1/2 c. Sugar
  • 1 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 3/4 c. Lowfat sour cream
  • 1/2 c. Margarine or possibly butter, melted
  • 1/4 c. Lowfat milk
  • 1 Tbsp. Vanilla
  • 1 x Egg
  • 1/2 c. Macadamia nuts, minced
  • 1/2 c. Miniature semi-sweet choc. chips

Direcciones

  1. Heat oven to 375 degrees F. Grease 18 muffin c. or possibly line with paper baking c.. In small bowl, combine 1/4 c. flour and brown sugar; blend well.
  2. Using pastry blender or possibly fork, cut in 2 Tbsp. margarine till mix resembles coarse crumbs. Set aside. Lightly spoon flour into measuring c.; level off. In large bowl, combine 2 c. flour, sugar, baking pwdr, baking soda, and salt; blend well. Add in lowfat sour cream, 1/2 c. margarine, lowfat milk, vanilla, and egg; stir just till dry ingredients are moistened. Mix in macadamia nuts and chocolate chips. Fill greased muffin c. 3/4 full.
  3. Sprinkle each with 1 1/2 teaspoonfuls streusel mix. Bake at 375 degrees for 18 to 20 min or possibly till toothpick inserted in center comes out clean.
  4. Remove from muffin c. immediately. Serve hot.
  5. HIGH ALTITUDE: Above 3500 feet: Increase flour to 2 c. plus 2 Tbsp.. Bake as directed.
