  1. In a skillet, heat butter over Medium heat. Add in the green pepper, onions and mushrooms; cook and stir till tender. Stir in peas, ham, mustard and salt; heat through. Gently stir in Large eggs; set aside. For sauce, heat the butter in a saucepan. Add in flour, salt and pepper, stir to make a smooth paste. Add in the lowfat milk all at once; cook and stir till thickened and bubbly.
  2. Cook and stir 1 minute more. Add in ham mix and heat through. Serve in pastry shells.
