Broiled Brown Butter Lobster Scampi

If you like shrimp scampi and like lobster, you are going to fall in love with this recipe. The lobster is so sweet and tender. With the addition of brown butter, the nuttiness takes this lobster over the top. I hope you enjoy.

Ingredientes

  • 3 lobster tails
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp unsalted fish & seafood rub
  • 2 pinches sea salt
  • 1/2 stick unsalted butter
  • 2 garlic cloves, minced
  • 1 small shallot, minced
  • 1/8 cup dry white wine
  • juice & zest of 1/2 large meyer lemon, or regular lemon
  • 2 Tbsp Italian parsley, chopped
  • 1 small roma tomato, chopped & desseded
  • sea salt to taste

Direcciones

  1. Preheat broiler to high.
  2. Slit lobster tails in half.
  3. Brush lobster tails with olive oil and sprinkle with rub and salt.
  4. Broil in oven for 8-10 minutes or until golden brown.
  5. Meanwhile, add butter to a saucepan. Cook butter on medium heat for 5-7 minutes or until butter is toasty brown.
  6. Add garlic, shallot pan; saute for 1 minute and then add wine, lemon juice and half of the zest. Reduce heat and simmer for 5 minutes.
  7. Toss in parsley and tomatoes to warm through. Add salt as needed.
  8. Plate up lobster and top with scampi sauce and remaining zest.
